Tomato Jam

  • 2T Eniva Trace Minerals
  • 2lbs Crushed peeled tomatoes
  • 1/4C Lemon juice
  • 1-6oz Bottle of fruit pectin
  • 6 1/2C Sugar
  • 1tsp Grated lemon peel
  • 1tsp Cloves
  • 1/2tsp Cinnamon
  1. Simmer 3 cups of above tomatoes for 10 minutes

  2. Add grated lemon peel and lemon juice

  3. Add sugar

  4. Bring to full rolling boil for 1 minute

  5. Stir in fruit pectin

  6. After removing from heat, add cloves, cinnamon, and Eniva Trace minerals

  7. Skim off foam and pour into hot sterilized jars within ½ inch of top

  8. Cover at once with hot paraffin 1/8 inch thick (prick any air bubbles) or seal using USDA boiling bath method.
