Country Potato Pancakes

  • 1/3C Omega 9 cooking oil
  • 1T Eniva Cal-Mag
  • 1T Eniva Trace Minerals
  • 3-4 3 Potatoes
  • 3 Large eggs
  • 1/4C All purpose flour
  • 1/4 Grated onionw (optional)
  • 1t Salt (optional)
  • 1T parsely for garnish (optional)
  1. Peel potatoes and grate to yield about 4 cups.

  2. Press excess moisture from the potatoes and pat dry with paper towel. .

  3. Place in a large bowl.

  4. Whisk the eggs in a small bowl just until blended. .

  5. Add the grated potatoes and mix well.

  6. Stir in onion, flour, parsely, and salt.

  7. Shape potato mixture into 3 inch patties.

  8. Pre heat oven to 200° F .

  9. Heat oil in medium skillet over medium high heat until hot.

  10. Add potatoe patties in batches to hot oil.

  11. Cook, turning once, until brown about 3 min per side; drain patties well.

  12. Transfer to a baking sheet.

  13. Place in oven to keep warm until serving time.

  14. Garnish with parsely, if desired.

Variations: Add 1/3 cup cooked bacon or finely shopped country ham to potato mixture. For crisper potato cakes set a strainer over a bowl and grate the potatoes into the strainer. Let them stand for 30mins. Then, carefully pour off most of the watery liquid in the bowl, reserving the potato starch at the bottom of the bowl. Then mix the starch with the potatoes, flour, and other ingredients.
